  • 1.5 lbs Boneless chicken breasts/thighs _ Cut into bite-sized pieces

  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Garlic powder
  • 1 teaspoon Salt

  • 12 oz Penne or rotini pasta _ Cooked al dente
  • 3 Bell peppers red, yellow, green _ Sliced
  • 1 Yellow onion _ Sliced
  • 3 cloves Garlic _ Minced
  • 1 cup Chicken broth
  • 1 cup Heavy cream or sour cream
  • 1 cup Shredded cheddar or Mexican blend cheese _ For creaminess
  • 2 tablespoon Fresh cilantro _ Chopped
  • 1 tablespoon Lime juice _ Fresh-squeezed
  • Optional Jalapeños _ Slicedfor heat for heat

Method
 

  1. Boil pasta in salted water until al dente, drain, and set aside with some reserved water.
