Method
 

  1. Cut chicken into bite-sized pieces and season with salt and pepper. Set up three shallow dishes: one with flour, one with beaten eggs, and one with a breadcrumb mixture. Line a baking sheet with parchment paper and preheat the oven to 425°F.

  2. Dredge each chicken piece in flour first, dip in beaten egg, then roll in the breadcrumb mixture, pressing gently to ensure it sticks. Place each piece on the prepared baking sheet and spray the tops lightly with cooking spray.
