For the Chicken
  • 2 large Boneless chicken breasts - Halved into 4 cutlets
  • 1 cup All-purpose flour - For dredging
  • 2 Eggs - Beaten
  • 1 ½ cups Italian breadcrumbs - Or plain + Italian seasoning
  • ½ cup Parmesan cheese - Gratedmixed with breadcrumbs
  • 1 teaspoon Salt - To taste
  • ½ teaspoon Black pepper - Freshly ground
  • ½ cup Olive oil - For frying
For Sauce & Cheese
  • 2 cups Marinara sauce - Homemade or quality jarred
  • 8 oz Fresh mozzarella cheese - Sliced
  • ¼ cup Parmesan cheese - Grated for topping
  • Fresh basil leaves - For garnish
For the Pasta Base
  • 12 oz Pasta of choice - Spaghetti or linguine
  • 2 cloves Garlic - Minced
  • 2 tablespoon Olive oil - For sautéing garlic

Method
 

  1. Pound chicken breasts evenly and season generously with salt and pepper.

  2. Coat in flour, dip in egg, then press into breadcrumb and cheese mixture.

  3. Pan-fry chicken cutlets in olive oil until golden and crispy on both sides.
