  • 4 pieces Boneless skinless chicken breasts _ Pounded to ¼ inch thick
  • 1 teaspoon Salt _ Divided
  • ½ teaspoon Black pepper _ Freshly ground
  • 1 teaspoon Italian seasoning
  • 1 cup Ricotta cheese
  • ½ cup Fresh mozzarella - Shredded
  • ¼ cup Parmesan cheese - Grated
  • 1 cup Fresh spinach - Chopped
  • 2 tablespoon Fresh basil - Chopped
  • 2 cloves Garlic - Minced
  • 4 slices Prosciutto - Optional
  • ½ cup All-purpose flour - For dredging
  • 2 tablespoon Olive oil
  • 2 tablespoon Butter
  • ½ cup White wine - OR chicken broth For deglazing
  • 2 cups Marinara sauce - Homemade or store-bought

Equipment

  • 1 Meat mallet or rolling pin (For pounding chicken evenly)
  • 1 Sharp knife (For slicing chicken and herbs)
  • 1 Plastic wrap (To cover chicken while pounding)
  • 1 Large oven-safe skillet (For browning and finishing in oven)
  • Several Toothpicks (To secure chicken rolls)

Method
 

  1. Pound chicken breasts thin and season with salt, pepper, and Italian seasoning evenly.

  2. Stir together ricotta, mozzarella, Parmesan, spinach, basil, and garlic until well combined.

  3. Spread filling on chicken, add prosciutto if desired, then roll and secure with toothpicks.
  4. Lightly coat in flour, sear rolls in butter and oil until golden brown on all sides.
