- Bake and cool pie crust. Separate egg yolks. Measure all ingredients. Set strainer near stove.
- Base Heat milk + cream until steaming. Whisk yolks + sugar. Combine cocoa + cornstarch. Keep chocolate chips ready.
- Slowly whisk hot milk into yolks, then return mixture to pot. Cook until custard coats spoon (5–7 min).
- Remove from heat, stir cocoa mixture, add chocolate chips, strain, whisk in butter + vanilla.
- Pour hot custard into crust, cover with plastic wrap, chill 4+ hours.
- Beat cream, sugar, and vanilla until soft peaks. Spread over pie, garnish with shavings, slice cleanly.
