  • 6 Yellow onions - Thinly sliced
  • 4 tablespoon Butter - Unsalted preferred
  • 6 cups Beef broth - Low-sodium or homemade
  • 1 cup Dry white wine - Sauvignon Blanc or similar
  • 4 sprigs - Fresh thyme
  • 2 Bay leaves
  • Salt and pepper - To taste

  • 6 slices French bread - Day-old works best
  • 1 cup Gruyère cheese - Grated
  • ¼ cup Parmesan cheese - Optional grated
🔸 Optional (Recommended):
  • 1 tablespoon Brandy - Adds depth stir in at the end
  • 2 cloves Garlic - Minced sautéed with onions
  • ½ teaspoon Sugar - Helps caramelize onions faster

Equipment

Method
 

  1. Slice all the onions thinly and begin cooking them slowly in butter.

  2. Stir onions occasionally, letting them caramelize to deep golden color.
