  • 1 ½ cups All-purpose flour _ Spoon & level
  • 1 cup Fresh blueberries _ Tossed in flour
  • ½ cup Unsalted butter _ Room temperature
  • 1 cup Granulated sugar
  • 2 large Eggs _ Room temperature
  • ½ cup Buttermilk
  • 2 tablespoon Fresh lemon juice
  • 1 tablespoon Lemon zest _ Freshly grated
  • 1 teaspoon Vanilla extract
  • 1 ½ teaspoon Baking powder
  • ¼ teaspoon Salt
Frosting
  • 8 oz Cream cheese _ Softened
  • ½ cup Unsalted butter _ Softened
  • 3 cups Powdered sugar _ Sifted
  • 1 tablespoon Lemon juice _ Fresh
  • 1 teaspoon Lemon zest
  • 1 teaspoon Vanilla extract

Equipment

  • 1 Muffin tin (12-cup) (Standard size)
  • 12 Paper liners (For cupcakes)

  • 2–3 Mixing bowls (Large and medium)
  • 1 Fine grater/microplane (For lemon zest)

Method
 

  1. Preheat oven, prepare tin, zest lemons, coat berries

  2. Cream butter sugar, add eggs, mix in lemon and vanilla
