  • 2 tablespoon Sugar - Can use honey/maple syrup instead
  • 2 Large eggs - Or flax eggs
  • 1 cup Whole milk - Or coconut/almond/oat milk
  • 2 tablespoon Melted butter
  • 1 teaspoon Vanilla extract
  • 2 Ripe mangoes - About 1 cup puree
  • ½ cup Mango chunks - For topping
  • ¼ cup Coconut milk - Extra tropical flavor
  • Coconut whipped cream - For serving
  • Maple syrup - For serving
  • Toasted coconut flakes - Optional garnish

Method
 

  1. Blend ripe mango into puree, save some chunks for topping.
