Ingredients
  

  • 12 oz Pasta _ Short pasta like shells penne, or rotini
  • 1–2 cups Peas _ Frozen or fresh
  • 2 tablespoon Olive oil _ Or butter for richer flavor
  • 1 small Onion _ Diced
  • 2 cloves Garlic _ Minced
  • ½–1 cup Parmesan cheese _ Freshly grated
  • ½–1 cup Pasta water _ Reserved
  • to taste Salt & black pepper _ For seasoning
  • 2–3 tablespoon Fresh parsley or basil _ Chopped
  • 1 cup Broth chicken or vegetable _ Optional, to thin sauce
  • 1pinch Red pepper flakes _ Optional for heat

Equipment

  • 1 Large pot (For boiling pasta)
  • 1 Large skillet or same pot (To cook base and toss)
  • 1 Colander (For draining pasta)
  • 1 Sharp knife (For chopping onion and garlic)
  • 1 Cheese grater (For Parmesan)
  • 1 Wooden spoon (For stirring)

Method
 

  1. Boil salted water, cook pasta until almost al dente, and reserve some pasta water before draining.
    Steaming hot fusilli pasta freshly drained in a pot, ready to be combined with sauce and other ingredients.
  2. Heat olive oil, sauté onion until soft, then add garlic briefly, making sure it does not burn.

  3. Add peas with onion and garlic, pour in pasta water, return drained pasta, and toss everything together.

  4. Adjust with extra pasta water if dry, turn off heat, add Parmesan and herbs, and mix until creamy and smooth.
