  • 1 Large skillet - For cooking spinach and onions
  • 1 Sharp knife - For scoring phyllo
  • 1 Pastry brush - For brushing butter/oil
  • 1 9 x13 baking dish - Standard spanakopita size
  • 2 Kitchen towels - For squeezing spinach dry
Ingredients
  • 2 lbs Fresh spinach - Washed wilted, squeezed dry
  • 1 Yellow onion - Large diced
  • 3 Garlic cloves - Minced
  • 2 tablespoon Olive oil - For sautéing
  • ½ teaspoon Sea salt - To taste
  • ¼ teaspoon Black pepper - Freshly ground
  • 8 oz Feta cheese - Crumbled
  • 1 cup Ricotta cheese
  • ½ cup Parmesan cheese - Freshly grated
  • 3 Large eggs - Lightly beaten
  • 3 tablespoon Fresh dill - Chopped
  • 3 tablespoon Fresh parsley - Flat-leaf chopped
  • 1 pinch Nutmeg - Ground
  • 1 teaspoon Lemon zest - Freshly grated
  • 1 lb Phyllo dough - Thawed
  • ½ cup Butter - Melted or use extra olive oil
  • 2 tablespoon Olive oil - For brushing phyllo layers
  • ¼ opt cup Pine nuts - Toasted
  • 2 opt Green onions - Sliced
  • 2 opt tablespoon Fresh mint - Chopped

Method
 

  1. Wash fresh spinach, wilt in olive oil, cool completely, and squeeze out all moisture.
    Slice of spinach pie with a golden crispy crust and creamy spinach and feta filling served on a plate.
  2. Cook diced onions until golden, add garlic for the last minute, then remove from heat.

  3. Combine spinach with onion mixture, fold in cheeses, beaten eggs, herbs, and nutmeg.
