  • 1 lb Ground beef - Can sub with turkey or chicken
  • 1 Yellow onion diced - Adds sweetness
  • 1 can 10.5 oz Cream of mushroom soup - Or cream of chicken
  • 1 cup Sour cream - Sub Greek yogurt for lighter
  • 2 cups Shredded cheddar cheese - Sharp cheddar recommended
  • 1 32 oz bag Frozen tater tots - Don’t thaw before baking
  • ½ teaspoon Salt - Adjust to taste
  • ½ teaspoon Black pepper - Freshly ground
  • ½ teaspoon Garlic powder - Optional
  • 1 cup Frozen corn - Optional veggie add-in
  • ½ cup Diced bell peppers - Optional for color
  • 2 tablespoon Green onions - For garnish after baking

  • 1 Large skillet (For browning the beef)

Method
 

  1. Brown ground beef with onions in skillet, drain grease, season with salt, pepper, garlic powder.

  2. Stir cream of mushroom soup and sour cream, combine with beef mixture, spread in baking dish.

  3. Sprinkle shredded cheddar evenly over creamy beef layer.
