This simple Tomato Gnocchi dish combines crispy gnocchi with rich tomato sauce and gooey mozzarella. It's a quick and easy weeknight meal that looks fancy, but is so simple to make, you’ll be enjoying dinner in just 20 minutes!

Ingredients
  

The Base:
  • 1 lb Store-bought gnocchi Gnocchi - Use fresh or frozen
  • 1 can 14.5 oz Crushed tomatoes - Or marinara sauce
  • 8 oz Fresh mozzarella Mozzarella cheese - Tear into chunks
  • 2 Cloves Garlic - Minced
  • 2 tbsp Olive oil Olive oil - For sautéing garlic and sauce
Flavor Boosters:
  • ¼ tsp Salt Salt - Season to taste
  • ¼ tsp Black pepper Black pepper - Freshly ground to taste
  • ¼ tsp Red pepper flakes Red pepper flakes - Optional for heat
For Serving:
  • to taste Parmesan cheese Parmesan cheese - Freshly grated for serving
  • to taste Fresh basi Fresh basil leaves - Torn for topping

Equipment

  • 1 Large skillet or cast iron pan (For cooking the gnocchi and sauce)
  • 1 Wooden spoon (For stirring the sauce gently)
  • 1 Sharp knife (For mincing garlic)
  • 1 Can opener (If using canned crushed tomatoes)

Method
 

  1. Heat olive oil in a large skillet over medium heat. Mince garlic and tear mozzarella into chunks. Have everything within reach.

  2. Add garlic to the hot oil and cook for 30 seconds until fragrant. Pour in crushed tomatoes or marinara. Season with salt, pepper, and red pepper flakes. Let it bubble for 2-3 minutes.

  3. Drop gnocchi into the sauce. Don’t stir for the first 3-4 minutes. Let the bottom pieces get golden and crispy. Give it one gentle stir, then leave it to cook undisturbed.

  4. Scatter torn mozzarella over everything. Cover the pan for 2 minutes to melt the cheese. Remove from heat and top with fresh basil leaves.
