Ingredients
  

  • 4–5 medium Zucchini - Slice lengthwise into ¼-inch strips
  • 1 tablespoon Salt - For draining
  • 1 tablespoon Olive oil - For brushing
  • 15 oz - Ricotta cheese
  • 2 cups Mozzarella cheese - Divided
  • ½ cup Parmesan cheese - Divided
  • 2 Large eggs
  • 2 tablespoon Fresh basil - Chopped
  • 1 teaspoon Italian seasoning
  • ½ teaspoon Black pepper
  • 3 cups Marinara sauce - Store-bought or homemade
  • 1 lb Ground beef/Italian sausage - Optional
  • 1 Yellow onion - Diced
  • 3 cloves Garlic - Minced
  • 1 teaspoon Fresh oregano

Equipment

  • 1 Sharp knife or mandoline (For even zucchini slices)
  • 1 9x13 inch baking dish (Main baking dish)
  • 1 Large colander (For draining zucchini)
  • 1 roll Paper towels (To remove excess moisture)
  • 1 roll Aluminum foil (For covering during baking)

Method
 

  1. Slice zucchini lengthwise, sprinkle with salt, let drain 30 minutes, then pat dry completely.

  2. Combine ricotta, half the mozzarella, Parmesan, eggs, basil, Italian seasoning, and pepper until smooth.
